This is a dramatic plant with dark red foliage and bright red flowerspires. The leaves are delicious and nutritious in salads, especially as baby leaves. The flowers make stunning bouquets. Their seedheads produce a toastable grain similar to quinoa. They thrive in extremely high heat over 100 degrees.

 

To plant, simply sow the seeds 1/4 inch deep in well-drained soil and water regularly. Amaranth plants thrive in full sun and can grow up to 6 feet tall, making them a striking addition to any garden. Harvest the leaves when they are young and tender for a delicious addition to salads, stir-fries, and soups.
